Ingredients
- 3kg Lemons
- 4 ½ kg White Sugar
How to Make It
Step 1
Peel the rind off the lemons very thinly and put into a pan. Cover with water and boil gently until tender.
Step 2
Drain and cool. Then shred into fine strips.
Step 3
Halve the lemons and squeeze out the juice and pulp, remove the pips and stem end and put to one side.
Step 4
Put pips etc. with the pith halves roughly cut up into 1.5 litres of cold water and boil for 30 mins. Strain.
Step 5
Add the strained water from the pips and pith to the rinds, juice and pulp. Boil together for 10 mins.
Step 6
Add the White Sugar and bring to the boil. Boil fast until set.
